These chocolate apricot bliss balls are a super delicious snack to have at any time of the day! They are gooey, crunchy, and covered in a perfect layer of melted chocolate!

Ingredient Notes
Dried apricots - for this energy balls recipe, we are not using dates like we did for the no bake energy bites but, instead we are using dried apricots! They are so gooey and a perfect alternative to medjool dates!
Almonds - to increase the protein and even crunchiness of these bliss balls we are using almonds!
Desiccated unsweetened coconut and lemon juice - the coconut and lemon juice are here to help balance the sweetness of the apricots because otherwise, you would just taste apricot that even though it is delicious, it is very sweet!
Dark chocolate - this is completely optional but it takes these bliss balls to the next level! I have used 80% dark chocolate but you can use 70% too if 80% is too dark for you.

Step by step instructions
- Add all the ingredients to the food processor except the chocolate.
- When it is all crumbly and you can press it in your hands to form small bliss balls, it is ready! If too crumbly add some water or some nut butter and, if too wet add some oats and blend until you reach the desired consistency. Form the bliss balls and place them on a plate.
- Melt the chocolate in a bowl, in the microwave by heating it every 30 seconds until melted.
- Dip each energy ball onto the chocolate or, you could simply place some chocolate on top of each energy ball until all are covered. Refrigerate until the chocolate is solid and enjoy!
Tips and variations
Nuts - if you are looking into changing the nuts for this recipe, you could either opt for some rolled oats or, you could try this out with any nut of your choice (walnuts, cashews, peanuts...)!
Dried apricots - as said before, these are to replace the common Medjool dates and work perfectly.
But, if you don't have these at home, you could also try with other dried fruits like dried figs, dried mango, or even go back to Medjool dates! Just know, that, of course, the flavor would be completely different from this recipe.
How to store it
Simply transfer these to a airtight container and store up to a week in the fridge.
How to freeze it
I have not tried freezing this as they disappear too quickly!
Frequently asked questions
If your mixture is too wet, add additional almonds 1 tablespoon at a time and blitz. Continue adding until it is crumbly but sticks enough to make the bliss balls.
If your mixture is too dry and is not sticking together, add either 1 tablespoon of water or nut butter until it sticks together.
Unfortunately, no. You need a strong food processor to make energy balls because it has to be powerful enough to break the dried fruit and the nuts.
