This creamy vegan broccoli pasta is crazy quick to make, super creamy, super flavorful and it is hard to believe all the flavor there is after only 20 minutes of prep and cooking time! A little bit like this super easy mushroom pasta!
Broccoli - as you might have guessed, the main ingredient is broccoli! I recommend using fresh broccoli instead of the frozen one as it has so much more flavor! This vegetable is so versatile! You could use it on a vegan buddha bowl, on vegan stir fry, with some peanut tempeh, or even on a super tasty vegan broccoli quiche!
Neutral flavored vegetable oil - this is what you will need to pan-fry the broccoli. It is a really small amount but makes all the difference!
Garlic - the garlic gives this creamy sauce another kick of flavor!
Super creamy sauce - for this you will need miso paste, unsweetened plant-based milk (I have used soy milk), lime juice, tahini, dried ginger and soy sauce. Super creamy sauces are one of my favorite things in the world!! Like this vegan mushroom sauce or even this vegan mushroom pasta!

Step by step instructions
In a bowl, mix the miso paste, soy milk, tahini, lime juice, dried ginger and soy sauce.
Making the pasta
Since this will be a super quick recipe, you can go ahead and place your pasta on a pan with some boiling water as it normally takes about 10 minutes to make.
Frying the broccoli
While the pasta is cooking, heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the broccoli, cover and cook for 5 minutes, stirring occasionally until crisp-tender. Add the minced garlic to the frying pan and stir frequently for 2 minutes to prevent it from burning.
Turn off the heat, add the sauce, stir, add the pasta and pasta water until the desired consistency.
Serve with some black sesame seeds on top and enjoy!
Tips and variations
Pasta - well here, it is totally up to you! You could use the one I love the most!! Tagliatelle! Or you could use some other pasta type!
Garnishes - you could top this pasta with any of your favorite garnishes, from lime juice to chili flakes to fresh herbs!
This pasta is perfect by itself or you could add some arugula to it and top it with some lime juice, some fresh herbs such as cilantro and some black sesame seeds!
How to store it
I would recommend letting the whole dish cool down and then storing it in an airtight container for up to 3 to 4 days in the fridge.
How to freeze it
To freeze, I would definitely recommend not freezing the pasta but just the broccoli and sauce!
How to reheat it
If you have stored it with the pasta, I would just reheat it in the microwave. If just the sauce, you could always reheat it in a frying pan until the sauce is boiling and add some unsweetened plant-based milk as needed.

Sure! I would stick with the same quantity of pasta that you prefer!
Yes! And no need to thaw, just add the frozen broccoli to the frying pan and you will need to wait a little longer for it to cook. However, I have to say, the flavor is even better with fresh broccoli.
