These crispy sesame crackers are so easy to make, you probably won't buy storebought crackers so often after you have a taste! They are perfect for any time of the day from an appetizer to a quick snack!

Ingredient Notes
All-purpose flour and water - the simplest combo to make any dough!
Seeds - for this cracker recipe, you will use a mix of white sesame seeds and black sesame seeds. Why not just one type? Well, white sesame seeds don't have a large amount of flavor whereas the black sesame seeds have a ton! So the mix makes it a perfect balance!
Aromatics - one thing I didn't want to bring you is tasteless crackers! So these have garlic powder, dried thyme and chili flakes! Along with the sesame seeds, you will have a ton of flavor.
Olive oil - I recommend a good quality extra-virgin olive oil. I say this because I know there are a lot of olive oil brands that are tasteless and once you have a good quality one, you will see in reality olive oil has so much flavor!
Baking powder - to make the crackers pop a little bit, you will be adding a tiny bit of baking powder.

Step by step instructions
- Preheat your oven to 190ºC (375F). Line a large baking tray with baking paper or with a reusable non-stick baking tray liner.
- To a bowl, add the dry ingredients and stir well.
- Add the water and olive oil and stir well until everything is mixed together and you have a crumbled dough.
- Add some flour to a surface and transfer the dough to this surface. With a rolling pin, roll the dough out as thinly as possible. Once your dough is really thin, use a pizza cutter or a sharp knife to cut the dough into small-sized squares. Place each cracker on the baking tray and make sure they don't touch.
- Bake for 15 minutes or until they get golden brown around the edges. If some are golden brown before the rest, remove them from the oven. Let them cool completely on the baking tray.
Tips and variations
Seeds variation - If you are looking at this recipe and thinking you don't have sesame seeds but still really want some homemade vegan crackers, try this with some other seeds such as pumpkin seeds, hemp seeds, or any seeds of your choice!
Taste test - I would recommend tasting the dough to see if you need to add a bit more salt or black pepper.
Refrigerating the dough - I have tested this recipe in some ways which including letting it rest in the fridge for 15 minutes and it made no difference. They come out perfectly without chilling the dough and, well, it is less time you spend in the kitchen!
Rolling the dough - the secret for really perfect crackers is to roll them up really finely. As long as you ensure your rolling surface has a good amount of flour, it doesn't stick.
Side dishes
These crackers are so perfect with any dips! Or even by themselves! You could have them with some mushroom pate, some hummus with tahini, or even with some adzuki bean hummus.
How to store it
Once the crackers are cold, transfer them to an airtight container.
