A lot of people have told me that, they think tofu is bland and they just don't think they will ever like it... If that is you, you need to try this easy curry tofu scramble!
Why should you give this Easy Curry Tofu Scramble a try?

Ingredients for the Easy Curry Tofu Scramble
- 1 Leek,
- 350 g Extra-Firm Tofu,
- ½ Red bell pepper.
- 2 Tomatoes,
- 2 Carrots,
- 4 Sundried tomatoes (the ones in the package and not in oil),
- 1 Tbsp Tomato puree.
What about the spices?
- 1 tsp Cumin,
- 1 tsp Garam masala,
- 1 tsp Curry,
- 1 tsp Turmeric,
- 1 tsp Cayenne pepper,
- 1 tsp Smoked paprika,
- Pinch of salt,
- Pinch of black pepper,
How to make this Easy Curry Tofu Scramble?
First thing, chop all your veggies! That way it will be much quicker!
Now, add the chopped leek and sundried tomatoes with the spices to a nonstick frying pan. Cook for 5 minutes on medium heat.
Then, go ahead and add all the chopped vegetables to the frying pan and cook for an extra 10 minutes.
Scramble the tofu in your hands and add it to the nonstick frying pan. Mix everything well and cook for an extra 5 minutes.
Let's talk replacements
Gives it a better texture, but if you can't find it, just buy a firm one.
Just don't buy silken tofu! That is for creamy sauces and it has absolutely no texture!
If you don't have these, the flavour will be different but it will still be really flavourful.
If you can't go to the store and buy these - add 1 tablespoon of soy sauce!
An easy one to replace, add some chopped onion.
I prefer it with leeks, but this recipe is really easy to work around.
The remaining vegetables
I find that this combination of ingredients is what has worked best but, you can really get creative with this recipe!
If you have any other vegetables, just use them up.
For the spices
It may seem like a lot but they work really well!
What to eat it with?
I love to top it up with some fresh herbs like parsley or coriander and some salty peanuts.
Besides that, I would eat it with:
- Roasted potatoes
- Toasted bread
You can store it in the fridge for up to 3 days.
This freezes perfectly so just freeze it for as long as you want! I have frozen it for quite some months and it works really well.
