These fluffy chocolate chip pancakes are so healthy that you can have them for breakfast every single day or top it up with your favourite fruits and icecream or yoghurt and have it for your next brunch!
To be honest with you, I am a bit lazy to cook pancakes…not because they are hard to make! Not at all.
The main reason is that I am forever a porridge for breakfast, type of person! But when I make them, I always feel like making them more often!
Why are you going to love this fluffy chocolate chip pancakes?
Really easy to make – trust me, just mixing the batter, waiting a few minutes and cooking it and it is done!
Healthy but still delicious ingredients – this recipe is sugar free!
Works as meal-prep too! – You can make double the recipe, leave the batter in the fridge and cook some more pancakes on the next day!
INGREDIENTS FOR FLUFFY CHOCOLATE CHIP PANCAKES
- 1 ripe banana
- 100 g spelt flour
- 1 Tbsp baking powder
- 1 Tbsp flaxseed
- 150 ml plant-based milk
- Square of dark chocolate (I used 85%)
HOW TO MAKE IT
Mash a banana in a bowl and add all the ingredients except the chocolate, to the same bowl. Leave the batter for 5 minutes before you add it to the frying pan.
Now, chop the chocolate into fine bits with a knife (no need to be perfect, so don’t worry about the size!)
Add 1 teaspoon of coconut oil to a frying pan or, if you know, your frying pan is a perfect nonstick one, you can leave the coconut oil aside.
Once the pan is hot, add 2 tablespoons of the mixture at a time and cook on medium heat.
Flip the pancakes when you see these bubbles starting to form
Leave to cook for additional 2 minutes on the other side. And you are all set!

For this recipe, given its simplicity, there is only one replacement I really wanted to point out
If you do not have flaxseeds at home, you can use the same measurement of chia seeds instead! It will work out perfectly!

- Nonstick frying pan
- 1 banana ripe
- 100 g spelt flour
- 1 tbsp baking powder
- 1 tbsp flaxseed
- 150 mL plant based milk
- 1 square 85% chocolate
