To make these energy bites, simply add the oats to the food processor and blend until it becomes almost flour. Add in the remaining ingredients and blend until well combined. Form small balls, place them on an airtight container and enjoy!
Tips and variations
Medjool dates - if you are not a fan of Medjool dates, try these apricot energy balls or even try using another dried fruit that you like such as dried figs, dried mango, well, the sky really is the limit for this one!
Peanut butter - if you are nut-free, you could try sunflower seed butter for example. If you are not nut-free but would like to change from peanut butter, try these almond butter energy bites!
Oats - if you'd like to change this a bit, you could use a nut or seed of your choice to replace the oats!
How to store it
I would recommend storing these energy bites in an airtight container on the fridge. They are good for at least a week!
