This strawberry chia pudding is both perfect for breakfast but also for dessert! You can meal prep it for an entire week and have a fresh and high protein healthy breakfast every day!
Given that we are still in strawberry season, I wanted to make a breakfast recipe that would have strawberries as the main ingredient given how much of a fan I am of them!
What do you need to make strawberry chia pudding?
Coconut yoghurt and soy milk - using yoghurt to make chia pudding is my favorite way of making it. It makes it thicker, creamier and gives it a perfect coconut flavor
Chia seeds - these seeds are essential as you might have guessed by now. They will transform the mixture from a tasty milkshake to a creamy and delicious pudding.
Strawberries - another main point but worry not! If you don't have these you can use your favorite fruit and use the ratio of yoghurt and milk to chia seeds and still end up with a perfect pudding.
Lemon juice - just a few drops of lemon juice make all the difference. It makes this extra fresh!
How to make it?
This only requires 3 steps really!
Initially add the plant-based milk, yogurt, and strawberries to a blender or you can just blend it with a hand blender. I have done both ways.
Now, transfer this to a jar and add the chia seeds and mix well.
Put the jar in the fridge and leave for at least 20 minutes.
If you have time, I would recommend leaving the jar in the fridge for 1 hour or as long as you can because the longer you wait, the more the chia seeds will absorb the liquid and the more pudding texture like you will get!
Want to turn it into a fancy dessert?
Are you looking at this and thinking you might want to serve it as a fancy but super healthy dessert?
If so, put it in some fancy cups you have at home or jars, anything works, cover with some chopped dark chocolate and then cover with some strawberries, mint, and a drizzle of maple syrup.
Let's talk replacements
Chia seeds - of course this is a recipe for chia seed pudding but, if you are looking at it, seeing that you have no chia seeds but would like something similar before you go to the store, make some overnight oats! They are not the texture of a pudding but they are creamy, tasty and perfect for meal prep too!
Strawberries - if you can't find strawberries, you can use any fruit you like! I personally love peach, mango, watermelon, well I am fruit lover so anything would work for me!

- 220 g coconut yogurt
- 100 mL soy milk
- 1 tsp lemon juice
- 60 g chia seeds
