Vegan Lettuce Wraps

These vegan lettuce wraps are the perfect quick and delicious meal with less than 10 ingredients and take less than 10 minutes to make!

  • 200 gram couscous
  • 1 teaspoon dried coriander
  • pinch of black pepper
  • pinch of salt

Peanut butter sauce

  • 2 tablespoon peanut butter
  • 1 tablespoon soy sauce
  • 2 tablespoon water
  • 1 teaspoon chilli powder
  • 1 tablespoon lime juice
  • 1 tablespoon rice wine vinegar


  • 4 sheets romaine lettuce

Black beans

  • 4 tablespoons black beans cooked or canned


Making the couscous

  • Add to a bowl, 200 grams of couscous with 1 teaspoon of dried coriander, a pinch of salt and a pinch of black salt.

Peanut butter sauce

  • Mix, in a bowl, 2 tablespoons of peanut butter, 1 tablespoon of soy sauce, 2 tablespoons of water, 1 tablespoon of rice wine vinegar, 1 teaspoon of chilli powder and 1 tablespoon of lime juice and stir well.

Assembling the wraps

  • Hold one or two lettuce sheets, add 2 tablespoons of couscous, 2 tablespoons of black beans and add as much sauce as you would like!


If you don't have couscous - you can use basmati rice, quinoa or bulgur
Lettuce - I have found the lettuce wraps hold better with romaine lettuce but you can also use butter lettuce or try with another type.
Black beans - if you don't have black beans, try this lettuce wraps with smoked tofu!
Peanut butter sauce - if you like spicy meals, add some more chilli to it!
